Arabic Chicken & Rice soup and 1st tip of the month: How to grow your own free lemon tree
Windy and cold here in Amman, Jordan. I guess it official!!! Winter is here!! I know... I know...I am always talking about my love for summer and my wishes to prolong it as much as possible BUT the one thing I just LOVE about winter is that it is the perfect season for soups. I love soups of all kinds, light, creamy, pureed , chunky, Arabic, western, cheesy...and the list can go on and on. It is the ultimate comfort food to warm your heart and soul in this weather.
Today's recipe was featured in Darna magazine, the first issue (the magazine that I am very proud to be part of its founders). The soup is a hearty chicken and rice soup that is flavored with the one and only Cardamom...this soup is just perfect... a full meal that is literally perfect in this weather. I can only describe the taste as spicy (not hot) and tangy as well due to the addition of lemon juice which really gives a great body and flavor to the overall taste. On a quick note and speaking of lemons, I have decided to share some tips with you this months that are a money savors. What does that have to do with lemons? Well, I finally decided to experiment by planting lemon seeds (from some of the lemons that I have been squeezing all summer long making all the lemonades I shared with you ..hahaha). I found some great tips and it worked. Now I am not sure if it will produce lemons eventually but the greenery in my kitchen not to mention the aroma of the great leaves is so worth it. Besides it is a free green plant in your kitchen...now that is a plus alone!!
What I did :
1- I soaked the seeds for a couple of days in water (to help loosen the skin)
2- I planted them on the surface of the soil (far away about 1 inch from each other)
3- I had some small stones placed on top to help the drainage of water to keep them down so they would make roots in the water.
4- I placed it on the kitchen window (sunny but not direct sun)
5- Irrigation is like sprinkles of water every day.
Now after a couple of months...this is my plant :)
I am not trying this with Tangerines...same method and I will update you how it goes.

بدا الشتاء بشكل رسمي هون بالاردن وطبعا انا كل شتاء لازم اضل لبربر عن اديش ما بحب البرد بس الاعتراف اللي عندي انه اذا في اشي بحبه بالشتاء فهو الشوربة...احلى موسم للشوربة اللي بتدفي القلب...شوربة اليوم كانت من الشوربات اللي شاركت فيها بمجلة دارنا العدد الاول وهي شوربة الدجاج والرز.
بس قبل الوصفة حابة هاد الشهر اشارككم ببعض النقاط اللزيزة التوفيرية بالبيت وجربوها بظن رح تعجبكم واولهل انكم تزعوا الليمون من البزر. طبعا من كتر ما عملت ليموناضة هاد الصيف خطرت على بالي الفكرة واللي عملته هو:
1- نقع بذر الليمون بالمي مدة يومين
2- زراعة البزر على سطح التراب
3- تغطية البزر بحصى خفيف ليسهل ان ينغرس بالتربة ويساعد بنزول الماء بالتدريج
4- مكان الزراعة: عند شباك المطبخ (فضاء وشمس غير مباشرة)
5- الري: رشرشة خفيفة يوميا
وبعد شهرين هي النتيجة
هلا قديش رح تزبط وتطلع ليمون او لا ما بعرف بخبركم. بس هي تجربة تانية مع الكلمنتيا.
وبعدين طلع ليمون ما طلع مش مهم...ريحة الورق بتشهي (ممكن استخدامه بالطبخ) وكمان وجود اشي اخضر وببلاش في المطبخ يعتبر بلس بلس يعني ++ هههههه
نرجع للشوربة هي وصفتها جربوها رح تحبوني
شوربة الدجاج والارز
المقادير:
لسلق الدجاج:
2 صدر دجاج بالعظم
بصلة صغيرة مقطعة
4 قطعاصبع كرفس
ورقة غار
جزرة صغيرة
عدة حبات من الفلفل الاسود الحب
½ عود قرفة كبير
5 حبات هيل
حوالي 6 اكواب ماء
ملح
لعمل الشوربة:
½ ملعقة كبيرة زيت
بصلة متوسطة مفرومة ناعم
½ كوب ارز متوسط الحبة منقوع بالماء مدة 20 دقيقة ومصفى
عصير ليمونة
ملح، فلفل اسود
½ ملعقة صغيرة هيل مطحون
بقدونس مفروم للوجة
الطريقة:
لسلق الدجاج:
في قدر كبير يوضع الدجاج وكل مقادير السلق والماء وعندما يغلي تزال الرغوة من على الوجة ويسلق على نار هادئة لينضج تماما ثم يصفى المرق ويفسخ الدجاج الى قطع صغيرة.
لعمل الشوربة:
تقلب البصلة بالزيت لتطرى ثم يضاف الارز زيقلب لدقيقة. يضاف المرق وعندما تغلي تخفض الحرارة وتترك ليقارب الارز على النضج. تضاف البهارات والدجاج وتغلي عدة دقائق ثم يضاف عصير الليمون وتقدم مزينة باوراق البقدونس المفرومة
such a hearty and delicious soup mmmm. I always wanted to grow a lemon tree, please let me know if it will eventually produce lemons ;)
